Our Process
We developed our own extraction process and are the patent-holders worldwide. The X Café process consistently captures and preserves the flavorful signature of our premium coffee beans using only high pressure and pure hot water. We roast, grind, extract, filter and package entirely in our state-of-the-art facility, and our method produces a food-safe and shelf-stable product. ![]()
The best of the bean:Most people don’t know that at least 80% of a roasted coffee bean is woody fiber (cellulose). This means that only 20% or less of any coffee bean is desirable flavor and fragrance. At X Café, our patented process captures only the desirable portion. We recycle the grinds into energy – not into your cup! What we are not:Many other extracts are made by simply adding water to instant coffee, creating a taste that is harsh and bitter. Instant coffee itself is made by over-extracting roasted coffee beans with 370 degree water to a solids level above 45%. This produces up to 25% cellulose (bean fiber) in the instant beyond what is valuable. Cellulose only adds weight and solids to the extract – never flavor or fragrance. Some extraction processes use cold water, and the extract is unstable. Others use water that is well above boiling temperature and causes undesirable over-extraction. Nearly all of these methods require either refrigeration, freezing, or both – while X Café extracts may be shipped and stored at ambient conditions.
Flavor and fragrance preservation:At X Café, we do not use alcohol or chemical wash, nor separate the aroma from the flavor only to recombine them at a later date. At the encouragement of the U.S. FDA, we use a very small amount of preservatives to maintain the flavor and fragrance to its optimum shelf life. Our preservatives cannot be tasted, and they are commonly found in beverages and foods on grocery shelves. Our 30:1 bag-in-box product contains 20% coffee solids, triple-filtered water, and preservatives. Our product sold for ingredient use contains no preservatives.
